Method
 

  1. Place the beef, chopped onion, minced garlic, and sliced mushrooms in your slow cooker.
  2. Pour in the beef broth, Worcestershire sauce, and Dijon mustard (if using). Season with paprika, salt, and black pepper. Stir well to combine.
  3. Cover and cook on low for 6-7 hours (or on high for 4 hours) until the beef is fork-tender.
  4. In the final 30 minutes of cooking, mix the cornstarch with water until smooth and stir it into the slow cooker. Allow the sauce to thicken.
  5. After cooking is complete, gently stir in the sour cream.
  6. Serve the creamy beef stroganoff over cooked egg noodles and garnish with the chopped fresh parsley.
